“’Maple syrup is made from the xylem sap of maple trees. The trees most commonly used are sugar maple, red maple and black maple because of the high sugar content in the sap,’” read out Graham from the brochure.
“It’s making me hungry, Graham!” declared Cosette. “Perhaps I’ll just nibble a corner of one of the maple syrup scones the hotel packed us for elevenses!”

“Listen to this, Hero,” said Cosette. “’Culinary expert Delia Smith described maple syrup to be a unique ingredient, smooth and silky-textured, with a sweet, distinctive flavour—hints of caramel with overtones of toffee—and a rare colour, amber set alight. The maple flavour is uniquely different from any other.’”
“We trust our Delia,” intoned Hero solemnly. “Pass the jug!”

Another opportunity to meet a Canada Goose, with her offspring! In recent years, Prince Edward Island has been an important migration stop for the Canada Goose in both spring and autumn.

“Let's just drink in this scene, shall we, Cosette?” suggested Beeboo, sinking down on a convenient tree stump.
Cosette agreed it was well worth spending some time there!

Prince Edward Island, nestling in the Gulf of St Lawrence, is renowned for its red-sand beaches, lighthouses and fertile farmland. Lovers of Anne of Green Gables should put it on their bucket list!

“Wouldn't it be lovely to live in a lighthouse like this one pictured in our itinerary in Nova Scotia? So romantic!" mused Cosette, nibbling on a taffy lolly.
"Well, I don't know," said Styxx. "It's not all about drinking coffee and gazing at the sea. You have to run up and down stairs, operate the light and the foghorn, and there may be no running water or electricity apart from a generator."
Cosette considered this. "Mine would be a luxurious, converted, non-operational lighthouse, then."

"Wasn’t it worth coming all this way, Cosette," said Snickerdoodle, "for this experience alone?"

North Rustico is a charming fishing village just five minutes from Cavendish, home of the Lucy Maud Montgomery Heritage Site. It's a must-see location for all fans of Anne of Green Gables!

“I’ve come prepared for anything, Cosette,” responded Elsa. “There’s deck shoes, snowshoes, tennis shoes, flip-flops, flippers, walking boots, Wellington boots—you name it, I’ve got it!”
New Brunswick Beachcombing
Beachcombing is a soothing activity which involves combing the shoreline to see what objects of interest you can see. This could be shells, pebbles, seaglass or even something more unusual! Beaches can be very specific in what they collect, due to currents, geography and offshore habitats. Some beaches are good for driftwood, others for mermaid’s purses.

“I’ve come prepared for anything, Cosette,” responded Pynelope. “There’s canvas deck shoes, tennis shoes, flip-flops, sandshoes, walking boots, sandals, loafers—you name it, I’ve got it!”

From across the road, Lulu surveyed the current stop on their map. “Would you fancy living there, Cosette?”
"Well, it's certainly a bit different to where we live," said Cosette. "But I could get used to it, I daresay!"

The blue jay is found throughout most of Canada, with the exception of the far west of the country. It is the provincial bird of PEI. The blue jay’s vivid cobalt or azure-blue tail and wing feathers make an exotic contrast against brown leaves or green grass. However, these feathers are not truly blue, as blue pigment is unknown in birds. The blue jay’s feather colour results from refraction, or distortion, of light by a peculiar inner structure of the feather substance.

Northern Cardinal
A great number of birds, including the Northern Cardinal and Blue Jay, have evolved to remain in Canada throughout the year. Many flock together, sometimes with other species, and huddle to help retain heat. This also reduces the need to watch out for predators. Most remain active by feeding on nuts, dried fruit, seeds, twigs and branches in the vegetation. Many of these species flock to bird feeders, where they supplement their diet with fatty items.

Cosette was very happy to meet Fino here! They both swapped tales of their experiences of their travels so far!

Nova Scotia, which is Latin for "New Scotland", is home to the largest Scottish Gaelic-speaking community outside of Scotland and their flag is a reversal in colours of Scotland's, consisting of a blue saltire on a white field. Peggy's Cove is a small rural community located on the eastern shore of St. Margarets Bay.

@ Peggy's Point Lighthouse
Cosette and Peter came across each other in the hotel bar. "Hey, Peter, what are you going to have?"
"I thought I'd try Canada’s national cocktail, the Caesar, Cosette. It's made of vodka, clamato juice, tabasco and Worcestershire sauce."
Cosette looked puzzled. "What's clamato juice, Peter?"
"Tomato juice with clams and chilli!"
Peggy's Point Lighthouse
Peggy's Point Lighthouse is an active lighthouse and an enduring image of Canada. Situated within Peggy's Cove, Nova Scotia, it is one of the busiest tourist attractions in the province and is a prime attraction on the Lighthouse Trail scenic drive. The lighthouse is operated by the Canadian Coast Guard and is situated on a granite outcrop at Peggy's Point, immediately south of the village and its cove. The red and white lighthouse is one of the most-photographed structures in Atlantic Canada and one of the most recognisable lighthouses in the world.

Cosette and Garth were entranced on reaching this Canadian viewpoint and eagerly posed for a picture standing on either side!

Cosette was listening enraptured to strains of music reaching them from a street violin player. “My mum used to sing this, Pricilla!” she exclaimed happily. "Leonard Cohen’s Hallelujah. This takes me back!"

Imagine all the boating parties that have set off from this secluded location in Nova Scotia with its own tiny beach! It's just the thing for a leisurely rowing boat trip followed by a small barbecue!

@ Bras d'Or Lake
“Shall we stop and eat our packed lunch here, Cosette?” asked Nesi .
“Yes, it seems a good spot, Nesi! Let's perch on those tree stumps there! I can't wait to sink my teeth into those slices of bannock!"

Bras d'Or Lake is an estuary in the centre of Cape Breton Island in Nova Scotia. It has a connection to the open sea, and is tidal. It also has inflows of fresh water from rivers, making the brackish water a very productive natural habitat. It was designated the Bras d'Or Lake Biosphere Reserve by UNESCO in 2011.

"Milica! Chef said he's making beaver tails for our packed lunch tomorrow!" whispered Cosette in agitation. "How horrid! We can't eat those!"
"Relax, Cosette!" said Milica soothingly. "It's a sugary pastry in the shape of a beaver tail, sprinkled with cinnamon or with jam spread on top! No pets are harmed!"

Yarmouth is a port town in Nova Scotia, whose industries include fishing and tourism. It is the terminus of a ferry service to Portland, Maine. It was formerly a major shipbuilding centre.

@ We All Live in a Yellow Rowing Boat
“Ooh, it's just starting to drizzle, Cosette!” said Phimi ツ. “Can you hold my torch and map while I dig out my Pac-a-Mac?"
Cosette good-naturedly took charge of Phimi ツ's possessions while she emptied her rucksack of a pack of sandwiches, a Thermos flask, a pair of galoshes, a bag of toffees, a paperback novel, a bottle of mineral water, an address book, some postage stamps, an assortment of different coloured biros, a bottle opener, a couple of old train tickets, a handful of golden and silver moles, a hotel key, some shopping receipts and a selection of rather battered sachets of salt, sugar and tomato ketchup before locating the Pac-a-Mac right at the bottom. This she donned and then Cosette helped her put everything back in her rucksack.
We All Live in a Yellow Rowing Boat
When you've done rowing round the coastline in your colourful boat, pull up an equally colourful chair to relax by this small bay! Nova Scotia has an incredibly long coastline compared to its overall size due to all its ins and outs, so there are numerous tiny inlets and bays all around the island.

“It would be great fun to camp overnight, wouldn't it, bunny?” said Cosette.
bunny shivered. “Brrrrrrrr! I think it would be a little too cold, Cosette! I like my creature comforts!"

Lighthouses are a common sight along the Nova Scotia coastline and remain an important symbol of the past. They beautifully highlight the picturesque coastal landscape. Some are open for viewing while others can be observed when passing on foot or on bicycle.
