Cappadocia is famous for its pigeons, and dovecotes have been hollowed out in the upper cliffs around each valley in the area. Pigeons need water to digest the grain they have in their craw/crop, so the dovecotes are built near a source of water. The pigeon is a symbol of peace and devotion to the family, also pigeon excrement was used as fertilizer.
